Banana Custard Pie in a Jar

My family loves bananas. I love them, my husband loves them, my son loves them. We like eating them for breakfast, for snacks, and before bed. Because we eat so many bananas, we buy a lot of them, and, sometimes, we end up with extra at the end of the week. Typically, when we have extra bananas, my husband makes a great homemade banana bread from scratch. But, I felt like trying something new. So, this month, I decided to make something sweet that I could eat at home, pack in lunches, and give to friends.
Gather up your mason jars and ingredients.
Begin by making your homemade banana custard.
Combine the milk, sugar, corn starch, and salt, in a pan, over medium heat, and stir frequently, until boiling.
Add a bit of the mixture to the beaten eggs, and mix together. Add the eggs to the mixture in the pan, and continue to cook and stir until the mixture is thick.
Remove the custard from the heat, and stir in the vanilla extract.
Place in the refrigerator to chill. Once chilled, add the mashed banana to the custard.
Layer your mason jars.
Graham cracker…
Banana slices…
Strawberry slices…
Banana custard…
Caramel drizzle…
Voila! A yummy and pretty treat!
Ingredients:
(Whole) Milk, 1 ½ Cups
(White) Sugar, 1/3 Cup
Corn Starch, 1 Tablespoon
Salt, 1/8 Teaspoon
Eggs, Beaten, 3
Vanilla Extract, ½ Teaspoon
Banana, Ripe, Mashed, 1
Graham Crackers, 10 Large Crackers
Bananas, Sliced, 2
Strawberries, Sliced, 15
Caramel
Mason Jars, ½ Pint, 10
Recipe:
1. Combine the milk, sugar, corn starch, and salt in a pan, over medium heat, and stir frequently until boiling, approximately 5-10 minutes. Once the mixture is boiling, continue to cook and stir for another 2 minutes.
2. Add ¼ Cup of the mixture to the beaten eggs, and mix together. Add the eggs to the mixture in the pan, and continue to cook and stir until the mixture is thick, approximately 2 minutes.
3. Remove the custard from the heat, stir in the vanilla extract, and place in the refrigerator to chill, approximately 1 hour.
4. Add the mashed banana to the custard, and fold in.
5. Prepare your mason jars by first adding a layer of crushed graham cracker, followed by a layer of sliced bananas, a layer of sliced strawberries, and, then, a layer of your homemade banana custard. Top if off with a drizzle, ½ tablespoon, of caramel.
Eat right away, or keep refrigerated until you cave in to temptation!
Impressive looking and absolutely delicious!
FYI: This recipe will also fill a pie dish. Double the recipe to fill more or bigger jars.
