Caramelized Onion and Goat Cheese Crostini….Valentine’s Day Dinner Course One.

Next Tuesday it’s Valentine’s Day! Mom Colored Glasses wants to provide you with a spectacular menu of easy, tested, and delicious recipes to whip up for your sweeties. We’ll post a new recipe each day this week to provide you with a complete menu by Friday; appetizer, drink, salad, main course, and dessert. And to make it even easier for you, we’ll post a grocery shopping list on Friday along with a complete collection of all the recipes that you can print off and bring to the grocery store with you next weekend to get ready for the big day. We had a lot of fun putting this menu together for you…….and even more fun eating it all…….we think you’ll love it too!
To start…….an appetizer:
Caramelized Onion & Goat Cheese Crostini
You know what they say…..if everyone’s eating onions then it’s okay to make it part of your menu……..so we proceed! If you’re not a huge fan of goat cheese (which I know it can take some getting used to) rest assured that this is mixed with cream cheese–the great equalizer–and it really tones down the sharpness. If you’re still not buying it, you could substitute the goat cheese mixture with boursin cheese. It has great flavor like goat cheese, but a different one, to contrast the onions and will give you the creamy texture that you want.
Step One:
This step can be done way ahead of when you’ll serve the crostini. Just refrigerate the caramelized onions and allow to come to room temperature before serving.
Heat 2 tablespoons of olive oil over medium heat. Stir in about two medium sized thinly sliced onions and cook uncovered for about 10 minutes stirring frequently.
Step Two:
Reduce the heat to medium and stir in 1 teaspoon of salt, 1 tablespoon of brown sugar, and 1 tablespoon of balsamic vinegar. Cook for 30-35 minutes longer, stirring about every five minutes until the onions are a deep golden brown and have shrunk slightly. Cool a little bit.
Step Three:
Heat your oven to 325 degrees. Place sliced baguette pieces on a cookie sheet and spray lightly with cooking spray. Bake until the breads just start to turn a golden brown…..no more than 10 minutes.
Step Four:
Meanwhile, combine 4 ounces of room temperature goat cheese with three ounces of softened cream cheese. Blend until smooth and set aside.
Step Five:
Place one teaspoon of caramelized onions onto each bread and top with a generous dollop of the cheese mixture. Sprinkle with some fresh thyme leaves.
These were honestly so fantastic I ate five in a row……and my two year old had one too. I know you’ll love them!
