Cool Chocolate and Peanut Butter Balls

The first time I met my husband’s parents my mother-in-law (of course, at that time, she wasn’t yet my mother-in-law) made a delicious chocolate and peanut butter treat that I couldn’t keep my hands off of. Every time I visit my in-laws, now, my mother-in-law makes them, and I take delight in devouring them. Now, I make my own version of these chocolate and peanut butter treats. My recipe incorporates my mother-in-law’s flavors and the classic ingredients of traditional Midwest buckeyes. These cool treats are perfect for warm summer evenings because they are kept refrigerated or frozen (I prefer them frozen).  On top of that, the recipe is so simple…

First, mix together the sugar, peanut butter, butter, and vanilla extract.

Roll the mixture into balls.

Melt the chocolate in a bowl and, using a spoon, dip the balls into the chocolate.

Place the balls on a cookie sheet, lined with wax paper, and refrigerate or freeze.

Voila!

Ingredients:

Confectioners’ Sugar, 6 Cups

Peanut Butter, 2 Cups

Butter, Softened, 1 Cup

Vanilla Extract, 2 Teaspoons

Chocolate Chips, Semisweet, 6 Cups

Recipe:

Mix together the sugar, peanut butter, butter, and vanilla extract.

Roll the mixture into balls.

Melt the chocolate in a bowl: In a microwave for 3 minutes; or over barely simmering water, until smooth (I prefer the microwave).

Using a spoon, dip the balls into the chocolate.

Place the balls on a cookie sheet, lined with wax paper, and refrigerate or freeze for at least 1 hour.

 

Optional:

Decorate these treats with extra powdered sugar or sprinkles. For birthday parties, use fun colors; or, for the 4th of July use red, white, and blue sprinkles. Be creative!

My husband prefers these treats refrigerated, but I like them frozen! Try them both ways, and let us know what you prefer!

  1. A favorite of mine as well! My husband’s Grandma makes them,so I’ve begun making them too. I try to stick to the holidays because otherwise, I too could eat them year round. I’ll have to try them frozen-sounds perfect!
    I’m not sure about the exact measurement differences, but his Grandma added Rice Krispies to add a little crunch and I believe she used crunchy peanut butter as well. Regardless…you can’t eat just one. And if you can, wow! That would be some remarkable self-control!
