Pot-of-Gold Floats

With St. Patrick’s Day coming up it’s fun to whip up a little sweet treat for the kiddos that hearkens thoughts of leprechauns and rainbows and pots of gold.  My daughter has recently fallen in love with sorbet–a much healthier option compared to the ice-cream she could down every night.  And lucky for this dessert–you can get it in rainbow.

Pick up your favorite flavor of sorbet, some gold coins, and a fruity soda.  A festive straw and cute drinking glass for your float only make this better!

First, I cut little wedges out of my gold coins with a sharp knife so they’ll balance on the side of my glass.

Then I load up the glass with sorbet and top it with soda.

Voila!  And while I can’t say it’s necessarily nutritious–it’s not too bad and those who matter definitely think it’s delicious!
