Gourmet Baguette Pizzas

June is a perfect month to focus on “Transitions.” The weather is changing; the flowers are blooming; the kiddos are singing, “School’s out for the summer!;” and backyard barbeques, cocktail parties, and play dates are in full swing. June should be a month to catch your breath, relax, and enjoy longer evenings with family and friends. When I have guests over to my house, or when I’m invited to a potluck, I always consider making these “Gourmet Baguette Pizzas;” and when I do, they’re always a hit! This finger food is great for summer evenings because it’s super easy, super quick, and super delicious.

For this recipe, you will need a baguette, tomato paste, marinated artichoke hearts, pitted and sliced kalamata olives, shredded asiago or parmesan cheese, and extra virgin olive oil.

 

Slice the baguette and brush with each piece with tomato paste.

Top each piece with artichoke hearts, kalamata olives, and asiago cheese.

Lightly drizzle each piece with extra virgin olive oil.

Cook, on a tray, for 10 minutes, at 350 degrees (Fahrenheit).

Voila! Enjoy!

 

Gourmet Baguette Pizzas Recipe

Ingredients:

Baguette

Tomato Paste

Artichoke Hearts, Marinated

Kalamata Olives, Pitted and Sliced

Asiago or Parmesan Cheese, Shredded

Extra Virgin Olive Oil

Instructions:

Pre-heat the oven to 350 degrees (Fahrenheit)

Slice the baguette into 1-2 inch pieces

Generously brush tomato paste atop each piece of baguette

Add marinated artichoke hearts, pitted and sliced kalamata olives, and shredded asiago cheese atop each piece

Lightly drizzle each piece with extra virgin olive oil

Cook, in the oven, at 350 degrees (Fahrenheit), for 10 minutes
