Valentine’s Day Salad

I heart Valentine’s Day… A day to celebrate my marriage, enjoy a candlelight dinner, and unabashedly watch a romantic comedy while stuffing my face with yummy chocolates filled with gooey goodness. I’m salivating as I think about it. Chocolates aren’t the only things that get my taste buds excited, though. A dinner to look forward to, a great salad—those do the trick, too. Here’s a great and simple salad, tossed with homemade tangy and sweet vinaigrette, to pair with your Valentine’s Day meal.

Gather the ingredients and wash the romaine leaves.

Toss together the romaine leaves, dried cranberries, walnuts, and blue cheese.

Make the vinaigrette by whisking together the balsamic vinegar, EVOO, Dijon mustard, and honey.

Add the vinaigrette to the salad, toss, and serve.

Ingredients List—

Green and red romaine leaves, 4 cups, packed

Dried cranberries, ½ cup

Walnuts, ½ cup

Blue cheese, 1 cup, crumbled

Balsamic vinegar, ¼ cup

Extra virgin olive oil, 1 tablespoon

Dijon mustard, 2 tablespoons

Honey, 2 tablespoons

Instructions—

1. In a large bowl, toss together the washed romaine leaves, dried cranberries, walnuts, and blue cheese crumbles.

2. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, Dijon mustard, and honey.

3. Add the vinaigrette to the salad (depending on your preference, add half or all of the vinaigrette), toss, and serve.
