Veggies in Red Curry Sauce

Spices, spices, spices! I love ‘em. My love of spices plays into my love for curry dishes. I’m always up for trying a new curry dish, especially when trying new curry dishes involves new restaurants in new cities. I can even make a few great curry dishes from scratch. I used to do a lot of travelling and a lot of cooking, but at this stage in my life I just don’t have as much time to spend fabulous nights out on the town or a few hours in my kitchen. If you haven’t yet tried CurrySimple’s sauces you’re missing out. They’re absolutely delicious and make cooking dinner very simple. They’re available from CurrySimple’s website, Whole Foods, and Earth Fare. Here’s my easy “peasy” recipe using CurrySimple’s Red Curry Sauce.

Gather and prep the ingredients.

Cook the veggies.

Combine, and finish cooking, all of the ingredients.

Serve, eat, and enjoy!

Recipe:

Ingredients List—

Potatoes, 2 (Washed, Peeled, and Sliced)

Yam, 1 (Washed, Peeled, and Sliced)

Onion, 1 (Peeled and Sliced)

Frozen Peas, 16 Ounces

Extra Virgin Olive Oil, 2 Tablespoons

CurrySimple Red Curry Sauce, 1 Package, 12.3 Ounces

Instructions—

1. In a large pot, boil the potatoes and yam for 30 minutes, or until tender.

2. Add the peas and boil for an additional 5 minutes, or according to package.

3. Drain the potatoes, yam, and peas, and return to pot.

4. In a skillet, sauté the onion with the olive oil for 5 minutes over medium heat, or until tender.

5. Add the onion and the red curry sauce to the pot, stir, and cook on low for an additional 2 minutes.
